I loveee to cook, but making breakfast food and deserts has to be my all time favorite. Now that I’m a mom, breakfast is a must meal in my book. During the week, unfortunately I don’t have time to make a full breakfast meal, but during the weekend I get down!
My daughter Leya is one picky eater, so at times meals can really be a challenge. However, I love taking on the challenges to create new breakfast meals that she enjoys. At first she was really diggin’ good ol’ regular pancakes, but after a while it’s as if she was over them. Which to be honest, I completely understand. Who wants to eat the same stuff all the time? So I started mixing things around and spicing things up and came up with this super simple and fast recipe.
Every time I make pancakes for Leya, I always attempt to make a Mickey face. I grew up with my dad making me countless Mickey faces and every time they put a smile on my face. Of course, if you can’t do it don’t worry! Circular pancakes are just as delicious!
When I presented these pancakes to her for breakfast a few weeks ago, she glanced over at me, smiled, and gave me a thumbs up. I seriously got butterflies in my stomach! It just made me so happy to see that she was genuinely enjoying them. Plus, every time they finish a meal, is a pretty good darn day! Am I right moms?! Ever since I made this recipe, I decided to put it to the test even further and see if my family approved. It’s safe to say, this will be a permanent recipe in our house hold. 🙂
Oh! and I also want to shout out the syrup I have been paring with them. It’s from a brand called Blackberry Patch, it’s their Maple Praline Syrup. Oh my goodness! *This recipe makes 8-10 medium-sized pancakes.
- 2 Bananas
- 1 cup of pancake mix (my Krusteaz or Aunt Jemima)
- 1 egg
- 1 tablespoon of oil
- 1 teaspoon of vanilla extract
- 1 tablespoon of cinnamon
- 3/4 of a cup of milk
