Happy Wednesday peeps! We’re back at the mid-week stretch. Work has been a bit cray some days but overall this week has been great! So many exciting things are coming to Soy Libre as well as in my life which I’m over the moon for! I seriously can’t wait to tell you guys about all the fun things that are to come. So be sure to keep your pretty eyes peeled!
Ok, so for today’s #wellnesswednesday, I wanted to talk about food! I’m a huge fan of Trader Joes and all its unique and yummy products, so most of the items I will be sharing (if not all), are from there.
These are also products that Leya has been loving and let me tell you, for Leya to love a food product that is not chicken nuggets or mac n’ cheese, is pretty shocking. Lol #toddlerlife.
Ever since I became a mom, I’ve been on a high low with weight. I know that I can lose it, I just lack consistency. I know, I know, I really need to get on it. Especially now that I’m getting older. When it comes to food, Mexican will always have the true and rightful place in my heart. I mean who can survive without tacos, beans, and Mexican rice?! Yeah, my point exactly!
Although Mexican food is bomb-digitty, it’s not the healthiest all the time. Tons of red meat! So, I’m always on the hunt for healthier products that are just as tasty and easy. Here are a few of my constant repeat purchases:
Cauliflower rice (Frozen): I love that this is a great substitute for rice. They have one in the refrigerated section, but I find that the one in the frozen isle tastes better and it cooks way faster. I always use low sodium chicken stock instead of water and a tea spoon of vegan butter. Just add a bit of salt and pepper and done! I usually pair it with chicken and veggies.
Turkey Corn Dogs: Yes girl, turkey corn dogs! Ok so I know that these may not be new, BUT they are definitely new to me. I love that they’re healthier version of regular corn dogs and I will always bake these instead of frying them. They come out just as good! Leya loves these too!
Turkey Meatballs: Keepin’ the turkey mojo going up in here! Lol but seriously these are amazing! They are great in spaghetti, as little sliders, or diced up on a scramble.
Arugula: Has officially substituted all other leafy greens for me. I love the spicy kick and it pairs so good with everything. I add it to my egg scrambles, I love sauteing it with other meats and I especially love making salads with it. I love drizzling a bit of the next item I will mention below, parmesan and cherry tomatoes. Quick and delicious!
Green Goddess dressing: This dressing is everything. It’s all the yummy green goodness that your salad will ever need. Like seriously, you can add this dressing on salads, I even use it on chicken tacos. It’s another great kick to add to your food!
Noosa: Oh my gosh you guys. I seriously have no words for this yogurt. Ok, no, that’s a lie… let me tell you how I really feel about this yogurt. It’s decadent, creamy, rich, delightful, sexy, and oh so delicious! This item is a little on the pricier side but I strongly believe it’s worth it. It essentially is greek yogurt with a flavored fruit. My favorite is the strawberry rhubarb and the lemon! Oh my god and topped with a bit of honey, is just out of this world. Ok, I’m done! I could seriously go on and on about this!
Ps: this one is not sold at Trader Joes. You can find it at Target or Costco.
Frozen Mangos: Just as good as it sounds! Perfect for snacking or smoothies!
Cauliflower Pizza Crust: Pizza has a special place in my heart. If there’s something more I love than eating pizza is making it. I love cooking pizza at home with Leya and just being creative. It’s a super healthy option that’s bread free!
Roasted Garlic Marinara: The tastiest marina sauce ever! Literally so good for anything, dipping, pizza, or spaghetti.
Avocado Oil: This was a recent discovery for me and I have to say that like all the products I mentioned above, I love it. I can’t remember where I read or saw that avocado oil was a healthier alternative. I personally love cooking with it. I found a pretty cool article on avocado oil vs. olive oil that talks about all the pros and possible cons. You can check it out here if you’re interested, and I’ll let you decide. 🙂
